soup


I was reading a book over the holidays, The Green Diet, I didn't take hold of the whole Green Diet concept, as it eliminates all meat and animal products like milk and cheese, but I have been contemplating it's guidelines and the general idea of moderation. Back to the topic at hand, I saw a recipe for taco soup in this book, I think it was taco soup, regardless it looked delicious.

I had to leave the book at my Mother's house but I have been searching the web for similar recipes. None of them are quite what I am looking for but they look/sound delicious. Chicken Enchilada Soup from Picky Palate and Crockpot Chicken Tortilla Soup from Cookbook Junkies (I can't find the link to this soup). I think I will buy some Costco tomato soup as well, I tried it at a friend's house, it is the only tomato soup I have ever enjoyed.

I think I need to make more soups. Soup has never been a favorite of mine, but I think with the right recipes that could change. It is perfect for winter.

Crockpot Chicken Tortilla Soup from Cookbook Junkies

4-6 chicken breasts (I usually just put them in the crock pot frozen)
2 cans black beans
1 can of corn
1 can chicken broth (water and chicken bullion cubes also works)
1 packet taco seasoning mix1 cup salsa (any kind, sometimes I'll just add the whole jar)
Top with grated cheese, sour cream, and chips before eating.

This recipe is great because you can throw it in the crock pot in the morning, cook it on low, and it's perfect by dinner time. The chicken usually shreds on it's own, but you may want to shred it yourself before serving it.

    I am so glad you picked up The Green Diet! It is always a big step going veg- recipes like this yummy looking Chicken Tortilla Soup would be out, ;) The Taco Soup in the book is delicious, one of my favorites. I am out of town, but I would be happy to send you the recipe for your site this weekend if you want it.
