Cafe Rio pork is not my favorite but it seems to be the only knock off recipe you can find. Today I found a knock off recipe for Costa Vida (Cafe Rio's knock off) shredded chicken! Hallelujah! I can now have my favorite version of the Cafe Rio salad!
